Our cuisine is contemporary, modern and we draw inspiration from all corners of the globe. it’s an open kitchen with adjacent chefs table, where the guest and chef interact to create a unique dining experience. The dining room is sleek yet comforting and near enough to feel the heat of the kitchen.
Cooking has been an integral part of Chef Omar's life. When kids his age were watching cartoons, he developed a peculiar interest in watching cooking shows. When he grew up in San Francisco, he spent his summer working at Peruvian restaurants such as Frescas and Limon.
After finishing college, Omar attended the prestigious Culinary Institute of America in New York which gave a kickstart to his career. He would go on to cook and stage at some of the best kitchens in New York City such as Alain Ducasse at Essex House, Eleven Madison, Momofuku and BLT before devoting his talents to Peruvian cuisine.
Combining all of his global culinary experience and knowledge, Omar ventured into Dubai by setting up Mayta Restaurant & Pico Bar in DIFC to present the 'Food You Love To Eat'! Omar now heads SLAB test kitchen and other casual as well as high-end projects.
The Food You Love To EAT
SLAB strips away all formalities from fine dining and focuses on quality of food, warm service, and relaxed casual ambience. It is design to be a social restaurant with an open kitchen merging indoor and outdoor spaces. Adding flowers and micro greens (the modern day chopped parsley) just for aesthetics is cheap, low-brow because it doesn’t make the food any better; so why put something on food that makes no sense other than it looks pretty? It shows a lack of creativity, confidence and is over-used by amateur chefs.
We at SLAB are about being creative, clever and simple modern approach to food that doesn’t prescribe to popular trends that are pretentious, fussy and overuse for sake of aesthetics. Besides burgers, our menu displays focus intergrity of ingrdients without trying to hard which reflects in our menus.
